1 egg
1/4 cup cold water
1 tablespoon white vinegar
1/2 teaspoon salt

1 cup ground chicken

1/4 cup chopped bell peppers
2 cloves garlic, minced
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/4 teaspoon chili powder
Salt and pepper to taste
1/4 cup raisins
1/4 cup chopped green olives
1 hard-boiled egg, chopped
Instructions
- Prepare the Dough:
- In a bowl, mix flour and salt. Cut in the cold butter until crumbly.
Add egg, water, and vinegar. Mix until a dough forms. Chill for 1 hour. - Make the Filling:
- Saute onions, garlic, and bell peppers in a pan until soft.
Add ground chicken and cook until browned. Stir in cumin, paprika, chili powder, salt, and pepper.
Mix in raisins, olives, and chopped egg. Cool slightly. - Assemble the Empanadas:
- Preheat oven to 375°F (190°C). Roll out dough and cut circles.
Place filling in the center of each circle.
