Ingredients

  • For the Dough:
  • 2 cups all-purpose flour

  • 1/2 cup unsalted butter, cold and cut into pieces

  • 1 egg

  • 1/4 cup cold water

  • 1 tablespoon white vinegar

  • 1/2 teaspoon salt

  • For the Filling:
  • 1 cup ground chicken

  • 1/2 cup chopped onions

  • 1/4 cup chopped bell peppers

  • 2 cloves garlic, minced

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon smoked paprika

  • 1/4 teaspoon chili powder

  • Salt and pepper to taste

  • 1/4 cup raisins

  • 1/4 cup chopped green olives

  • 1 hard-boiled egg, chopped

Instructions

  • Prepare the Dough:
  • In a bowl, mix flour and salt. Cut in the cold butter until crumbly.

    Add egg, water, and vinegar. Mix until a dough forms. Chill for 1 hour.
  • Make the Filling:
  • Saute onions, garlic, and bell peppers in a pan until soft.

    Add ground chicken and cook until browned. Stir in cumin, paprika, chili powder, salt, and pepper.

    Mix in raisins, olives, and chopped egg. Cool slightly.
  • Assemble the Empanadas:
  • Preheat oven to 375°F (190°C). Roll out dough and cut circles.

    Place filling in the center of each circle.

    Fold and seal edges.Brush with beaten egg and place on a baking sheet.
  • Bake:
  • Bake for 20-25 minutes, until golden brown.
